from Anne Pritchard, Sales Representative - The Cookbook Marketplace

Roasted Cashews with Rosemary (from Tables of Content) is a family favorite, which started out as a holiday tradition a few years back and quickly turned into a required staple in the many care packages I send to my oldest daughter, who lives in Los Angeles. She serves at a mission base which takes students on foreign mission trips, so being able to give her a taste of home every once in a while means the world to her! When I make a batch, I always freeze half since it holds up really well frozen…and she never can tell in her care package if it’s fresh or frozen!

Roasted Cashews with Rosemary

2˝ (9-ounce) cans roasted whole cashews (1˝ pounds)

2 tablespoons unsalted butter

1˝ tablespoons brown sugar

3 tablespoons chopped fresh rosemary

1 teaspoon kosher salt

˝ teaspoon cayenne pepper

Preheat the oven to 375 degrees. Spread the cashews in a single layer on a lightly greased baking sheet and heat for 5 minutes. Maintain the oven temperature. Melt the butter and brown sugar in a large stockpot over medium heat, stirring frequently. Remove from the heat and stir in the rosemary, salt and cayenne pepper.

Add the cashews to the stockpot and toss to coat. Spread the cashews in a single layer on the baking sheet and roast for 5 to 10 minutes or until light brown, stirring occasionally. Serve alone or sprinkled over salads.

Note: These nuts will stay fresh for several weeks in an airtight container, making them the perfect gift.
