A big part of the Kempf social life is centered around grilling out on our deck/courtyard. Our courtyard faces east, so even on hot summer days we are in the cool shade by late afternoon. We’re always on the lookout for a good new grilling recipe. Several years ago I found a recipe in a book we published for marinated swordfish, and everyone loved it. Naturally when I saw this Grilled Swordfish with Citrus Salsa in the Junior League of Tampa’s The Life of the Party, we had to try it. This is such a cool and refreshing recipe, and everyone who has tasted it loves it. I am a charcoal griller so you might have to play around with the cook time based on how hot your grill is. Enjoy!

Grilled Swordfish with Citrus Salsa

Citrus Salsa

3 oranges, peeled, white pith removed, seeded, chopped

1˝ cups chopped tomatoes

1/4 cup minced red onion

1/4 cup chopped fresh parsley

2 tablespoons fresh orange juice

2 teaspoons minced garlic

2 teaspoons balsamic vinegar

1/2 teaspoon grated fresh gingerroot

Salt to taste

Pepper to taste

Marinade

3/4 cup teriyaki sauce

2/3 cup dry sherry

4 teaspoons minced garlic

1˝ teaspoons grated fresh gingerroot

1 teaspoon sesame oil

Fish

6 (5- to 6-ounce) 1-inch-thick swordfish steaks

For the salsa, combine the oranges, tomatoes, onion, parsley, orange juice, garlic, balsamic vinegar and gingerroot in a bowl and mix well. Season with salt and pepper. Let stand, covered, at room temperature for at least 30 minutes.

For the marinade, combine the teriyaki sauce, sherry, garlic, gingerroot and sesame oil in a saucepan. Bring to a boil; remove from the heat and let cool.

For the fish, arrange the swordfish steaks in a single layer in a shallow glass dish. Pour the marinade over the fish, turning to coat evenly. Marinate, covered, in the refrigerator for 1 hour, turning frequently. Remove the fish from the marinade; discard the marinade. Grill the fish over hot coals for 4 minutes on each side or until the fish flakes easily and is opaque in the center.

To serve, spoon a small amount of the salsa on each swordfish steak. Serve additional salsa on the side.

Great news from The St. Louis Herb Society—they are radio stars! The “Charlie Brennan Show” (KMOX) featured the group’s cookbook, Herbal Cookery, on a recent show. They were also on KWMU (NPR affiliate) to promote the book. When they took call-ins at KWMU, there were so many calls their system crashed!! The station said they NEVER had gotten so many calls for one show. (The group is trying to work on getting a recurring show with them. Fingers crossed.) The cookbook is selling itself.
