FRP Cookbook University is May 27 and 28, 2009, at the Opryland Hotel and Convention Center in Nashville, Tennessee. This will be the only date and location for FRP Cookbook University in 2009.  Click here to register!

FRP CU Tuition:

  • FRP clients (those with a signed FRP contract) will be charged $100 for each attendee. A Master-Level Class is included for each attendee registered.
  • Non-FRP clients will be charged $399 per person. An optional Master-Level Class is $125 per person (in addition to CU tuition).

When we reviewed My Mama Made That (the new cookbook from the Junior League of Hampton Roads), we decided that the Black-Eyed Pea Salsa sounded wonderful and easy. We divided up the ingredients and made our list of food and utensils to bring into the office. On the day of making this recipe we arrived a few minutes early to mix up the salsa so there would be time for the flavors to blend. At lunchtime, when we tasted this recipe, we all agreed it was one we would share with our friends and family and make for years to come.

Black-Eyed Pea Salsa

1 cup frozen corn kernels

1 (15-ounce) can black-eyed peas

2 garlic cloves

½ cup loosely packed cilantro leaves

Juice of ½ lime

1 (14-ounce) can Mexican-style stewed or diced tomatoes

½ cup chopped green onions

Place the frozen corn in a colander. Add the peas. Rinse with cold water until the corn begins to thaw.  Shake well to drain any excess water and place in a bowl.

Process the garlic and cilantro in a food processor or blender until finely chopped. Add the lime juice and tomatoes and pulse a few times, being careful not to over-process. Add to the corn mixture and mix well. Stir in the green onions. Spoon into a serving bowl. Serve with tortilla chips.
