The village of Bronxville barely spans one square mile, yet for the past 60 years, the city’s Junior League has positively impacted people’s lives without boundaries. To continue their community enhancement efforts throughout Southern Westchester County, the Junior League of Bronxville has released its first community cookbook, Beyond One Square Mile.
This simple cookbook with its modern design takes you on a tour through the less traveled but equally intriguing part of New York State; places like Mount Vernon, historic Yonkers, and Eastchester, where the Bill of Rights was ‘born.’
The recipes in Beyond One Square Mile seem to reflect Bronxville’s connection to its rich history, as well as its progressive trend-setting tendencies. Notables from the appetizers chapter include Figs Filled with Goat Cheese and Prosciutto and a great recipe for Pomegranate Mojitos. The Long Island Green Tea, which calls for sake, vodka, gin, and antioxidant-rich green tea, might just make your toes curl.
The Rebel Eggs recipe is a classic kickback casserole that incorporates sweet Italian pork sausage, eggs, dry mustard, bread, and Cheddar cheese into an amazing breakfast casserole. A modern way to incorporate zucchini and sweet potatoes is the deliciously spicy Zucchini and Roasted Sweet Potato Bread. And the Holiday Sing Coffee Cake looks like a delicious treat to serve on holiday mornings or at potlucks.
Getting to the main course, Bronxville Junior Leaguers don’t mess around. The Horseradish Mashed Potato Shepherd’s Pie, Pork Chops with Cranberry, Port and Rosemary Sauce, and Sautéed Scallops and Sweet Pea Risotto are all recipes that I’ve not seen before and are at the top of my ‘must-try’ list.
There are hundreds more amazing recipes in Beyond One Square Mile, every one of which seems to use familiar ingredients, possibly with a new or special one thrown in to raise the bar a bit. All are feasible though, and sound like they need to be tried and then tested.
