Maple Leaf Farms Celebrates Fifty Years of Duck with Meals to Remember
October 6, 2008

When an independent entrepreneur with an American dream moved from Chicago to Milford, Indiana and bought a small duck farm, he didn’t realize his company would be a national leader in producing quality duck only 50 years later.

That is the start of Don Wentzel’s Maple Leaf Farms. Always a family business, Maple Leaf Farms built on its early success on ensuring the utmost quality control in every aspect of raising, harvesting, and creating duck products with superior quality and consistency.

Meals to Remember: A Celebration of Duck commemorates Maple Leaf’s legacy and the delicious duck it produces, with 14 beautiful chapters, each with a duck-filled menu for special occasions.

The Thanksgiving chapter has recipes for Baked Sweet Potatoes with Spiced Butter Pecan Topping, Savory Sage Corn Bread Stuffing, Roast Duck with Cranberry Orange Sauce, and Bourbon Chocolate Pecan Pie, among other festive holiday offerings.

The Mexican Birthday menu celebrates with Grits and Green Chile Casserole, Mexican-Style Black Beans, Duck Chipotle-Stuffed Poblano Chiles, Duck Fajitas and Tequila Sunrise Punch.

Other standout duck recipes include Duck and Vegetable Lasagna, Grilled Rosemary Duck Breast Sandwiches with Onion Marmalade, Polynesian Duck Kabobs, and Maple-Glazed Duck Breast with Gingered Cranberry.

Each chapter features recipes for appetizers, salads, entrees, desserts and drinks, as well as wine pairings. There is also an entire informative chapter for storing, handling, and preparing duck.
