Settings on the Dock of the Bay, a Tabasco Community Cookbook Regional Award Winner, has recently entered its third printing. This cookbook, first published in 1999 by the Assistance League of the Bay Area, includes recipes that express and explore the region’s unique mix of cultures and commerce, from the sea to outer space, and from Tex-Mex to German, with a lot added in between.

The Karankawa Indians once wandered the shores of Clear Lake and Mud Lake in southeast Texas; the pirate Jean Lafitte buried treasure along the Gulf Coast, and one of the pioneers of rice farming, H. Kobayashi, left Japan to settle in Webster, Texas. Today, Texas’s bay area takes pride in its diversity and the area is one of the largest inland sailing centers in the United States. It is also home to astronauts, scientists, and engineers based at the Johnson Space Center.Settings on the Dock of the Bay blends all of these elements into a cookbook well-suited to beginning cooks and gourmet chefs alike.

Beginning with the wine reference (including pronunciations) at the front of the book, Settings on the Dock of the Bay presents recipes that typify the region’s varied heritage. With recipes like Cranberry Salsa (p. 23), Artichoke Bread Pudding (p. 55), savory Tex-Mex Waffles (p. 63), Grits Souffle with Carmelized Onions (p. 117) and more, this cookbook is sure to inspire cooks to experiment with new menus and try new ingredients.

Proceeds from the sale of Settings on the Dock of the Bay benefit the Assistance League’s many community service projects, including child care for children in residence at a local battered women’s shelter; college scholarships for needy students; support services for at-risk students and more. The Assistance League was founded in Los Angeles in 1900 to utilize the potential of volunteers to help those less fortunate to lead better, more meaningful lives.
