In 1959, the Junior League of Baton Rouge published what would become the most successful community cookbook in the country: River Road Recipes. Forty-six years, three additional cookbooks, and more than $2.8 million donated to community projects later, the League has reprinted River Road Recipes III: A Healthy Collection for the sixth time. The River Roads Recipes series has been referred to as the “textbooks of Louisiana cuisine.”

River Road Recipes III was published in 1994 and was one of the first low-fat Junior League cookbooks in the nation. It won a Tabasco Community Cookbook Award in the year of its publication, and more than 100,000 copies have sold since it was published.

River Road Recipes III will delight people everywhere who want to eat well with less fat and fewer calories, but still want to enjoy great Louisiana food. Recipes taken from the classic River Road Recipes were modified to lower fat and calories, analyzed by a registered dietitian. Each recipe includes full annotation on fat grams, percentage of calories from fat, grams of saturated fat, total calories, cholesterol, and sodium. The famous Spinach Madeline from the first cookbook is only one of several such fat-modified classics. Seasoned liberally with full-color photos and vignettes from Southern Louisiana, this healthy cookbook includes a special section featuring recipes from well-known Louisiana chefs and additional tips on low-fat cooking techniques, further lowering fat and sodium in recipes, and recipe variations.

Proceeds from the sale of the Junior League of Baton Rouge’s cookbooks benefit a number of local agencies and organizations including Teachers Matter, which assists in the retention of first- and second-year teachers; the Youth Legislature program, which teaches elementary and middle school students about the legislative process; a one-week summer art camp to teach visual art techniques to disabled children.
