The Avera McKennan Foundation’s new cookbook, Cooking for Life: Recipes for Healthy Living, Volume 1 is a collection of recipes as rich in color and flavor as they are in nutrition. Created to benefit the Avera Cancer Institute, this cookbook places a special emphasis on creating appealing, highly nutritious dishes for cancer patients undergoing chemotherapy. All proceeds from the book will be donated to the Avera McKennan Foundation and used exclusively for cancer patients.

Ninety-six recipes cover the usual categories of home cooking: appetizers, soups, salads, entrees, side items, breads, and desserts. What makes this cookbook special is the emphasis on increasing the nutritional benefits of dishes while also emphasizing flavor and taste. With its concentration on whole, unprocessed foods, a wealth of nutritional information, and extensive cooking and serving tips, these recipes make an excellent addition to any cook’s kitchen library. This fresh and balanced approach to classic recipes like Niçoise Salad, Chicken Enchilladas, and Hearty Oatmeal Cookies is paired with recipes that dramatically increase nutritional values without adding saturated fat, cholesterol, or sodium. Try the Mean Potato Salad, the Artichoke Spinach Lasagna, or the Cashew Pork Tenderloin with Peach Sauce.

The Avera McKennan Hospital and University Health Center are committed to providing patients with the tools they need not only for healing, but also for creating and maintaining a healthy lifestyle.
